Hello Prashant,
I wanted to confirm if we are talking about the notes records? or the Notes itself ?
If you are using CRM online and if you have deleted the records for the Notes then we might not be able to retrieve the records.
however if you are using CRM online , you can check with Microsoft Support if they have the Database backup available before the deletion of the records occurred.
Also the Notes are added to the task entity by default.
You can Navigate to Settings-->Customization's-->Entities-->Task and under the Entity definition we would see that
checkbox for the notes . we can choose to select the same. save-->Publish Customizations.

its not possible to re-add notes if you delete it.
Yes this is possible. Go in the Entiy Tasks and activate the "Note" Checkbox
