External Gift Cards and Canceled orders

I am trying to figure out how I would setup D365 so that when I have a Gift Card and a POS Sales Order gets cancelled in the Call Center it will go back to a customer reimbursement check instead of trying to create a new gift card.
 
I have read that I should have the ability to have funds go back to a new gift card or to another form of payment, but I have not been able to find where I would setup the other form of payment that I want to use.   It is working as I want when I do a return, but not when a Cancel is done.
