how do you delete a company on the uk preview? & how long is the preview avaliable for, so i've got chance to teach myself how to use financials?

You can't delete a Company, but you can create new with Company with demo data (called Evaluation Company) or new Company without demo data. The latter will start a 30-day trial. You can play around with Evaluation Company for as long as you like. Preview will be available till general availability which is expected in summer, however even at general availability you will still be able to evaluate and learn for as long as you like in Evaluation Company.
