Hi,
Is there a way to hide the currency symbol from currency field when mapping the field to Word Templates?

There is no direct way of doing it.
You can however create a calculated numeric field and fill that with currency field. Then in word template add this numeric field instead of currency one.

We can't hide currency symbol in out of the box default D365 CE/CRM word template. The way around you can use to create calculated field of decimal type and assign it with the value of currency field.
Other 3rd party document generation addon solutions (Document Core Pack, Xpert Doc, Dox42 etc.) have such functionalities to format/show/hide/custom conditions etc. in the word template.
