Hi:
In Business Central's Table Information window, I see the "Created At" field in the Item Ledger Entry table.
When I pull this same table into Power BI, I do not see this field.
Why is that, and how can I see this field in Power BI?

If you go to Web Services in BC then search for Item Ledger you can see Query has been published for it. Which means that query does not include Created By field.
You have two way to go:
1) Create a custom query that include that field. This is the recommended method.
2) Add created by to page 38 (Item Ledger Entry) first. Then search for Create Data Set enter the name (without space) then select Page and then 83 and after that select fields you want then publish and consume this new web service. Not recommended since slow down the BC at refresh but if you refresh at night it works.

For that you need a developer to do that.
Or you can try Simple Object Designer to publish API

I personally always used the second method since the first one was costly. But I am in unique position that I can refresh data between 6 pm to 5 am when nobody is in BC

90% of time I use Personalization and add the field that I want into the page I want. The rest of 105 I use Designer in Sandbox to add then download the app and upload in production (of course this is on your own risk). Or if you have developer in house you can do this without Designer

Hi, just adding to others' reply.
What Power BI can access, whether it's APIs or Web Services, are Pages (some of them are Query) and not tables, so you need to add to the page first to be able to do that.As mentioned by several experts above, this requires customization.
