Hello!
I just managed to turn a sharepoint site to Default, selecting Document Management Settings, choosing an entity and changing the URL in the field Sharepoint Site below (image) to the URL of the site I wanted to set as default. This worked. But the site must be verified first.
No need to write any code or workflows.
The easiest way I found is to edit the form (SharePoint site information) and add the missing 'default site' entity to it.
The SharePoint site can then be enabled as the default in a normal way from the form.

It seems like that has been missing for a long time, and not sure if Microsoft is planning on fixing this issue.
Saying that, there are a few workarounds.
1. You can create a workflow (on demand), and create an Update Step. In the Update Step, select Update and choose SharePoint Site as the entity.
Click on Set Properties, and in the Additional Fields Tab you will see the Default Site field. Simply Set it to Yes.
Save your changes and Activate the Workflow.
Navigate back to SharePoint Sites entity, select the site that you want to make default. On the command bar, click on the three dots, and select Run Workflow. Select the workflow that you created, and Press OK to run.
Once run, the site will be set as Default.
