Do you have a timer on your tasks? Generally speaking, there is no "start" and "stop" for tasks out of the box in CRM, which makes me think you're dealing with a customization. Have you enabled SLAs for tasks? You should be able to enable pausing from the SLA rule if you did.

Do you mean an task as an asynchronous workflow or an activity?
