Is there a way to add products to closed opportunities? i haven't been able to do this user end or through imports, is there a xrm tool that we may be able to use?

You try to add using plugin code. May be the final calculation on the opportunity will not update because of inactive opportunity record. You can still try once.

The only way that this would be possible is through the API I believe. You would need to use code or power automate. There will probably be an issue with the calculations working because it is done on the opportunity level and it will be closed so probably won’t work.
Is there a reason that you cannot reopen the opportunity and then add the products and then close it as won again?

Because the rollup calculated fields will not work if your opportunity is in closed state.
