Eventhough you can select both web or UUI, the web version no longer loads (yet selectable). I have not seen any documentation that mentions the legacy version no longer works.

1) given the idea behind Dynamics, that would make no sense
2) No offline mode. The app is the only way to still do something offline (given outlouk client is deprecated)

Mobile app doesn't render the web form . If you still want web app look and feel then there are couple of approaches
1. Create native mobile app which renders exactly want you want (custom development & tidious)
2. Login your crm using mobile browser instead of app Which will load web forms

No, the forms you are talking about, are no longer working, so it's you who is in for a change/surprise :-)
This means you NEED to create an app and package your solution and you have to accept the new limitations of the new updated/uui forms like e.g.: the inability to render charts etc.
=> that said, it's starting to make sense there is no update available yet for 8.2 environments as it would render them useless immediately.

maybe there is no documentation but since 2 years now the old form are deprecated. It is time for you to change.
As a workaround: You could access CRM through the webbrowser of your smartphone/tablet insted of using the app.
