If you want to manage suppliers in CRM, then I'd still you the standard contact and account fields to manage the suppliers (maybe with an additional field on the account to indicate if it is a supplier)

As to the interaction with suppliers: If the CRM instance is solely used to interact with suppliers (and not customers), you could reuse the sales entities (opportunity, quote, order). However, if the CRM instance is also used to interact with customers, I would probably create new entities to manage the quotes and orders placed with suppliers
