I have a GP 2015 server that I need to point to different SQL server name. Can someone guide me to the right direction?

Have you thought about assigned a DNS Alias to your new GP server that would hold the name of the old one ? this way you can switch to the new server without having to redo all the ODBC definitions from your GP client workstations and you wont have to reset all the user's passwords (because that's what is going to happen if you change the server name in the ODBC connection).
Did you change the ODBC connections on the workstations to point to the new server?
That is only other place that GP looks.
