Is it possible to completely hide/remove this pop up? We still want to pick cases but the behavior should always remove items from queue. The pop up shows up after the clicking 'pick' on cases in the queue.

I believe it's possible but you will have to hide the OOB Pick item button and create the code that mimics the OOB behavior and remove the item from the queue.

You could use Ribbon Workbench to achieve this. As Andrew Butenko says, you need to hide the OOB Pick button and create a custom Pick button to replace it.
And you need create a custom rule and invoke PickFromQueue action with setting the "RemoveQueueItem" parameter as true in your code.
