I know It sound ridicules that someone still using GP 10. but the users wanted to use MS office 2016 with it.
Will GP 10 work with MS Office 2016?

Never tested, thus not supported. The only versions of MS Office that would be supported with Dynamics GP 10.0 would be what is in the System Requirements page for GP 10.0.
Dynamics GP 10.0 isn't actually a supported version either, as of October 2017, so I would recommend looking to upgrade soon if not already doing so, as you wouldn't be able to get support with your current Dynamics GP environment.

Those 2 versions (GP & Office) are far apart... The problem you may encounter is the export from GP SmartLists to Excel 2016 or to some extend, due to the lack of Office Web components in the most recent releases of Office.. you may have to download them separately and install them on the PC where GP client is used.
