Please, what is the difference between Dynamics sales on-premise vs on cloud from a functionality perspective?
Hi,
Dynamics 365 Sales has more features than On-premise version. Also, whenever Microsoft release new features (most of them) are initially featured in Cloud Version.

Furthermore, cloud version has more integration capabilities than on-premise. But this doesn't mean, on-premise version is inferior, it has its own pros.
