When looking at the admin center and User Licensing section. Why can the Primary Email address of a User be different to their Office 365 username? What is the purpose of this?

This is because organizations may or may not use office 365 email address for users. They might be using their onpremise exchange server so that email will be configured here which might be used for escalation emails or user emails.
