A multi-select option set column must be added to a custom entity, and the options must come dynamically from security roles.

Can you please provide an example? Do you want to filter existing options of the multiselect optionset based on the security roles of the current user or something else?
My requirement is to create a multiselect lookup field/multiselect option set field of security roles in a custom entity
If you need it why not create an N-N relationship between your 2 entities and use OOB Subgid? That would require 0 development.
