What is minimum system requirements to install AX 2012 on my PC as demo.

It depends on the functionality you want to install or have in the environment. I did a clean installation with help of Hyper-V on my laptop with an Intel i7 processor (6 cores allocated), 8GB memory, 7200 rpm internal harddisk. The machine itself runs on an external harddisk also 7200 rpm and connected to my laptop with USB3.
In this machine I have not installed sharepoint or help features. Also the OLAP cubes are not installed. The machine runs acceptable.
If you want to use a standard Hyper-V from Microsoft, you would need at least a host system with 16GB memory. Otherwise some services won't start until you stop some other services. Also SSD drives would speed up the environment.
When you use hyper-v or do a install stand alone, you certainly gain performance when you can take use of multiple physical drives.
