The New features of GP 2015
How many companies are using it currently?
Is it possible to upgrade it to GP 2015 from GP 2010 as a one upgrade?

Answer to your questions are already available on GP 2015 product download page (CustomerSource / PartnerSource), except for the question about how many companies using it.
GP 2015 is on RTM, so I guess not many companies have upgraded yet. It's just 2 months old. I can also tell you that more companies are certainly planning (or planned already) to upgrade.
There is one thing that will definitely prevent you from upgrading to GP 2015, which is having Arabic characters in your database. So if you do have such characters, do not upgrade because Report Writer is not printing Arabic characters properly, they comes out as rubbish.

This is being investigated currently by Microsoft, hope it will soon be resolved.
For the features, you can simply check the feature of the day series by Inside Microsoft Blog. For the upgrade path, you can upgrade directly to 2015 if you are on SP4. Check this out, GP 2015 Upgrade Path

You cannot go from 2010 to 2015 in one swoop...you need to go to 2013 R2 first.
