Customer is saying "I posted my payroll batches, and was then trying to make a change and removed the build.  Now I cannot find the batches anywhere to make changes or even recover them to post as they were. The batches aren't in batch recovery, I tried to recreate them to get them back, but that didnt help either. HELP!!"

You cannot go thru and post batches and then remove a build.  This tells me that the customer never posted anything, they had not finished the full Payroll Process if they were able to remove the build.  When you build, you choose the batches you want in your payroll and you can include all your salary.   But if they then deleted the batches, the transactions  are gone.   And if they say they posted, then they were finished with the process, did they ever print the checks or have them ready for direct deposit.  I would be looking at the last posting and reports and see if they truly posted everything.  And asking if they printed/direct deposited checks?
