I have a client whose stores are open past midnight and he would like his sales to not rollover into the next day.

you can do that by workaround solution using one of three ways
1- adjust company PC's time to be 2 hours or 3 hours early.
2- customize sales / batches reports transaction time to be shifted by number of hours
3- take only batch opening time in your reports as transactions time
