We have a item which will be made to order and there are several variations of the item.

If we create a BOM for all the available options there would be around 32 BOMs. Which would be extremely difficult to manage.

What's the best way to set this up in AX?

There are BOM and sub BOMs, pegged supply, manufacturing multiple BOMs in production. Which is the most suitable option or is there another option which would suit our needs?

    We use Product configuration models to accomplish this with great success. 

    There is a bit of a learning curve to them but they create a central BOM/Route master to manage.  I can provide you with some documentation we give our users if you are interested.
