I use CRM 2016 Online, How can i set up the Quotation, order and invoice Number, In my own format. For example : Quo_FY170001 (FY17 represent the year, it can be change and the four following number can be reset, when FY17 changed to FY18). Currently the default is : prefix, number and Suffix (QUO-00001-AS7F).

With the out-of-the-box functionality you can't. You can change the prefix and switch the suffice to 4 or 6 characters, and that's it.
If you really need your number style, you need to look at autonumber solutions. There are plenty of topics around this on this forum or the internet.
