Hi,
I am not sure how to create a notification alert - for all open sales order, i would like to get a notification when inventory pertaining the the particular sales order is replenished.

There is no option out of the box to send an alert when the inventory is replenished. Are you using automatic reservations for this purpose? If so, you can try developing a business event that would be triggered when an inventory transaction related to a sales order is being reserved.
Yes, Automatic reservation is being used. So if then, it would be great if can assist to create a business event.
