Is it possible to enforce "Force Logoff" on RMS POS machine, if it was left untouched for a specified time interval?

Not out of the box, but you could require a login for each sale (Manager | File | Config | Options tab | POS options | Force Login...) and then password protect a screen saver.
There are add-on vendors that offer a Force Logoff for RMS that might pipe in here.
