Message encoding problem in Exchange Server 2016

We have application(Microsoft Dynamics AX 4.0) that send out emails through the application(mails are sent with smtp on-prem exchange 2016) and an issue we are running into is some specific country letters don't get translated correctly when sent to mailboxes inside company(works sending outside, for example O365 or Google). For instance, when message includes letters with roofs like ž or š they will be modified to random symbols.
Application AX 4.0 e-mail parameters are our local exchange.

I have researched some Microsoft topics and I think it is related with encoding or Supported Character Set, but I really could not find a guide where to change or add the supported region settings or etc...
