Time stamp delay by 24 hours?

Hi!  hopefully someone can provide an answer for this strange delay in the time stamp function.

When I go to log an activity (specifically a phone call or send an email through outlook which will sync into CRM) the phone call, lets say, will immediately show up logged with my notes however the time stamp area will say "Today" or, as in the example I logged yesterday, will say "Yesterday" until the time stamp "decides" to show up (I am unaware on the exact delay but my guess is that it is between 24-48 hours later).  See the screenshot that I added here:

The company I work for has two sales offices, one on the east coast and one on the west coast.  I am not sure if the time zone difference comes into play here.   I don't see why it would necessitate such a delay with respect to a time stamp.

Any ideas?  I really appreciate everyone's input and help! :)
