In previous version I had created menus based upon job function, and used all three columns so that user did not have to scroll up and down to find items.
When upgraded to Solomon 2011 menus will only show 2 columns, even though the entry in Menu Maintenance shows item to be in column 3.

Unfortunately, this is bug 23726 in SL 2011. The menu isn't displaying three columns even though you add items to column 3. . It is not scheduled to be fixed at this time. I apologize for the inconvenience.
