We need to move our on-prem CRM instance into a new AD domain. If you can also shed some light on the process needed for changing the SharePoint domain that will be great.

Thank you.
In a nutshell, for CRM get the CRM Server installed in the new domain, backup the CRM database from your old domain, and restore in the new SQL server on the new domain.
After that is done, go to Deployment Wizard on the CRM Server and Import Organization.
You will need to remap all your old AD user accounts to new AD user accounts. It is probably easier to do this in an external file, and map using external file. You can also see what the Automatically Map users option will give you as a result.
Once your users are mapped, you should be able to have your organization working in the new environment.
Of course you will need to configure ADFS and Claims/IFD in the new domain if you are using that.
For SharePoint migrations, Shergate has a real good migration tool (www.sher-gate.com)
Good luck.
