when i try to add new field to currency forms the new field buttom disabled, i do no why (i have administrator account), any idea please.

Currency is a system entity. Adding new field/form/view is not allowed on it.
it is possible to add new fields in the database and create new view, forms.... ?
Making such changes to the database is not supported and you risk crashing your CRM instance.

You can enable auditing for Currency entity. Check if that helps you.
crm keeps the history of the currency even though if you change the exchange value over the year in case of organizations using multiple currencies .

If you are using price list to add products to an opportunity update the price list item value that change will be reflected in the opportunity without affecting any existing opportunity
For someone reading this is in 2020, it is still the same. We cannot add new form/ field / etc. to currency entity.
