Server-side Sync Caused Mailbox sizes to Grow 200+ MB

Hello,

I recently attempted to implement server-side synchronization in at my organization.  During tests in UAT, all seemed to go smoothly.  When it came time to enable the change in production I noticed many errors stating that various mailboxes had reached their size quotas.  When I looked at my own Outlook quota, the change had added about 250mb of extra data to my mailbox.  

I looked through all of the various mailbox folders hoping I would find new items or some kind of explanation but nothing stood out.  I then looked at all email activities in Dynamics and sorted by Modified Date, but nothing changed with the activities already in the system (thinking it may have synced those with the mailboxes if they hadn't already existed in Exchange anymore). Then, I immediately disabled server-side sync and within 5-10 minutes my mailbox size was back to normal. 

The individual mailboxes were configured to use server-side sync for Outgoing only.  Incoming and Appointments, Contacts, and Tasks were set to "None".

Staff still had the Outlook add-on installed by their mailboxes and the organization were changed to no longer use it (not sure if that's an issue). 

Has anyone come across this issue before or can someone explain what may have happened?
