How can I improve the performance of the environments? Is it possible to give the environments more "power"?
The apps are all up to date.
In Sass its not possible, you can raise support ticket to Microsoft if you facing issue in Performance to your production environment.
Thanks.
Microsoft have a scale up / scale out mechanism that automatically will adjust the performance of your environment in most cases.
If you experience poor performance please first check if that can be due to some customized code.
If you think that is not the case and still experience poor performance you should raise a support ticket to Microsoft through your partner.

but you cannot increase the performance of a Saas environment as if it were an on -prem infrastructure
