I want to look in a log file when the cashiers delete a item in the transaction sale.

There is no such log file. If the transaction is not finalized in the system, nothing is every recorded. What we recommend to our clients looking for a solution to this is to disable the ability to remove line items, and train them to instead put a quantity of 0 if there really was a need to void a line.
