Hello everyone, we are getting started with Dynamic 365. We offer different types of service and they have a different workflow in the sales process for each one. So, can I set multiple pipelines and then choose one when I create the opportunity depending? Or maybe other way to do that.

You can create one buiness process with condition.
First step will be the same for all processes, other depends on your paramater.
But remember about limitations.

If you have very complex automation, you can use Microsoft Flow.
