I want to show my site entity in Field service site map but I am not able to do so:
All options are lock. What happens with me? Or what is this? Why this lock? Are we able to customize this entity?

This is by design, this entity cannot be modified in regrads to area and other settings.

you can try to use the site map editor of Dynamics 365 or the XrmToolBox.
It is all described here:
