HI All,
we have a client that has his production on version 7.3 , and i wish to upgrade it to latest version, if i clicked on maintain upgrade, will it automatically upgrade to version 10.0.9 ? since it is production ?

Upgrade of production environment is done by Microsoft, you can raise a request for upgrade with Software deployable package and they will take care of the rest.
I suggest going through this Microsoft documentation page on deployments which is very detailed and give you all the required information and process.

You should commit the upgrade in the sandbox UAT environment first.

Maintain > upgrade is not going to the magic you are thinking . You have to schedule time to deploy deployable package from LCS . Once that is done the next step is run database upgrade, which will be done by DSE team as well. Before scheduling prod upgrade make sure you have done all these steps in your test environment.

If you don't have any overlayed code then code upgrade is not needed but data upgrade step has to be done .
