I feel for you having to redo security from version 9.You're in luck though, all of your users have only one role and one task. You can modify each of their tasks and uncheck the user date button. So, instead of the DEFAULTUSER task, you'll have a task for each user/company combination.

That will work, thanks, how ever before I can implement I have to fix all of the security as when we upgraded from GP 9 to 2010 it migrated all the old security which is a mess. I tested it by creating a brand new user and just adding the stock sales role and it worked perfectly, Thanks to all for you suggestions.
Go into Administration | Setup | System | Security Task
Select the DEFAULT USER security task. If you want to remove access for all users, uncheck the user date window as shown in the screenshot below:
The DEFAULT USER task is most likely included in everyone's security, unchecking the User Date button will keep folks from changing the user date.

How would I create a security task to remove access?
Seems I've been doing too much with with modified windows recently so everything started to look like a nail (when all you have is a hammer etc.).
As you say Vaidy, altering the security would do exactly the required action.
How about removing access to User Date window by using "Security Task Setup"? Instead of VBA (which would require code maintenance) or Field Level security, removing access to that window itself would convey users that he/she is not supposed to change user date. And it's out-of-box and a straightforward setup.
In case, someone might require this option genuinely, you could create a custom Security Task/Role for such users, enable access to this window on that Task/Role and add those users to it.

To make it work, I added the User Date window to VBA then added a couple lines of code to hide and close the window when the user tries to open it.

This is sort of a cheap way to do it, but you could use Field Level Security to disable the OK button on the user date window. This would prevent users from saving a selected date.
*To do this go to Field-Level Security, Click ADD and browse to:
Microsoft Dynamics GP / Company / User Date / Main
*Select the OK button and set the security to Disable Field
*Assign to any affected users.
