Will it cause me any issues if I change the name of the root business unit? Or is it just a label?

Thanks, I had seen those articles but those threads are quite old so I wondered if things had changed more recently.
I came to ask because I am able to click on the Business Unit to open the edit window and the save button appears to be active.

Unfortunately you cannot change the Root Business unit name, Though it is giving an option to edit and save it should throw an error once you click on save. You can try this in trial environment
The organization (also known as the root business unit) is the top level of a Microsoft Dynamics 365 business unit hierarchy. Dynamics 365 automatically creates the organization when you install or provision Dynamics 365. You can’t change or delete the organization name.
You can rename them using small customizations tweak.
The Parent BU field requirement has to be modified before renaming the root BU.

An alternative to customising is updating it via excel. You can export the Business units to excel, update the name in excel and then re-import the data to update the root Business unit name
As an update to this, now you can make the change directly without making any adjustments to whether the parent BU is required or not right from the maker portal. I have Business Units inside of a solution, I went to edit the table (see below) then made the change directly into the gird and saved. As to whether or not you should do it, it shouldn't cause any issues assuming you don't have any code that relies on the pre-existing business unit's name. If you do, I'd suggest updating or creating something on update.
You can make the field optional using javascript too. Run in console devtool browser Xrm.Page.getAttribute("parentbusinessunitid").setRequiredLevel("none");
