We are planning to escalate Lead based on some conditions. The SLA feature is capable to achieve this task. I am able to implement this in D365 trial instance.
When going live, my client has only D365 Sales professional license. So is SLA part of D365 Sales Pro license? If yes, can SLA feature be fully available for use for all users?
On the same lines, is the Holiday schedule feature and business hours management included in D365 Sales Pro license?

You should check the Dynamics 365 Licensing guide. According to Appendix B page 37, SLA configuration is available to Customer Service Professional / Customer Service Enterprise. Service Agreements are available for Field Service.
