When I change the owner of an account the owners of all recent opportunities owner also change.
Existing relationship between Account and Contact: N:1 check on image.

Go to the Opportunity entity's N:1 relationships, and edit the opportunity_customer_accounts relationship, and under Relationship Behaviour, change Type of Behavior from Parental to Configurable Cascading and Change it to Cascade None
in all relevant fields and check if that works.

This could be because of the cascading rule, check account and opportunity relationship which is parental and change it to configure cascading, further you should be able to change settings.
