Hi,
Can you tell me please what is the best development method to stop a save and show a javascript alert on a field from a pre-stage plugin ?

Please can you post some more information? It's a little bit hard to point your requirement.
I am developping a crm plugin to validate a crm field before saving the record.
If the field didn't satisfy the requirement, the system must show an error message on that field and didn't save the record.
How can I do it please?

To prevent saving you must throw an exception in your plugin...
For this, please use the following: "InvalidPluginExecutionException"
The system displays the message you used in the InvalidPluginExecutionException. DONE!

There is not way to show Javascript alert from Plugin.
but as suggested but Karsten Wirl you can use Invalid Plugin Exception to Stop Save and throw alert from Plugin.
