is there a way to set the item group and/or the item model group to a default setting?

Hi Georgek,
You can use product templates to default particular information when you create release product. Refer to this post for additional information: blogs.msdn.microsoft.com/.../using-product-templates-in-dynamics-ax-2012 The post is for AX2012 however same functionality exist in D365FO, except record templates can be found under Common > Setup > Record templates
