We've added the Outlook add-on for Dynamics 365 for Financials and it is working great.
However, we can't determine how to switch between companies when using this Add-on if the user has multiple companies in Financials?

Dynamics 365 for Financials Outlook add-on will detect whichever company you last logged in with. I don't believe you would be able to switch between companies through the add-on, you would need to change companies through the desktop app.
Just jumping in to confirm what Brian has said. It is essentially connecting to whatever the user has set as their default company. Switching it through the browser is currently the only way to switch it.
