Just simply looking to see where in the system i can remove the "case" option when converting an activity

You can hide convert to Case option, but you need to this for each activity type.
e..g. email you can hide option as follows, using Ribbonworkbench
you can hide same way for other activities. This will hide convert to case option when activity is opened (from activity form ribbon command).
hope this will help.
Download "Ribbon work bench" and import it to CRM.
Create a new solution and add the activity entity in the solution.
Open Ribbon work bench and load that solution
Click that entity and right click the convert button hide it.
