Updating Pipeline Phase with new stage

I am trying to add a new stage to the sales pipeline and have it populate in the pipeline phase field. I have added a new value to the global option set and written a workflow to update the field, but to no avail. I have read a number of forum posts and blogs about this issue, but have not found a clear answer.

I feel I am missing something obvious and/or basic.

Has anyone found a method to resolve this in D365?

I resolved this issue by creating a custom Pipeline stage field on the opportunity, and populating it by WF from the BPF Stage name. This is much more flexible and not constrained the legacy coding that is left in 365 from 2016.
