We would like to know what list of fields usually comes with the dynamics 365 crm out of box.
e.g. may be customer name , email ,etc ?

You can get those list from XRMToolBox metadata document generator.
Go to the tool and load entities -
Once entity loaded , select the entities and choose the Include requirement level. Then give file path to generate the document.
You will get the excel like below for each entities -
