We would like to know what list of fields usually comes with the dynamics 365 crm out of box.
e.g. may be customer name , email ,etc ?

You can use the following article docs.microsoft.com/.../about-entity-reference to view out of the box entities and default attributes of each entity.

You can get those list from XRMToolBox metadata document generator.
Go to the tool and load entities -
Once entity loaded , select the entities and choose the Include requirement level. Then give file path to generate the document.
You will get the excel like below for each entities -
