Hi:
 
We're on version 25.0 of Business Central.
 
Is there a manual process for updating to the latest version of Business Central, or is this conducted through some sort of automated update process?

    I hope your doing good.
     
    Standard practice is you schedule the update after business hours. Please do the sandbox first and then production.

    If it is the cloud version, you will be forced to upgrade when the deadline comes.
    Hope the following helps.
    Business Central 2024 wave 2 (BC25): Manage environment updates more flexibly – Major update: 30(60) days -> 5-month and Optional minor updates
     
    PS: Major update of Dynamics 365 Business Central 2025 release wave 1 (BC26) is available for existing customers
