Hi:

We're on version 25.0 of Business Central.

Is there a manual process for updating to the latest version of Business Central, or is this conducted through some sort of automated update process?

Standard practice is you schedule the update after business hours. Please do the sandbox first and then production.

If it is the cloud version, you will be forced to upgrade when the deadline comes.
