Hi
the manuals for NAV are the same books used in training, this means that the best place to get them is at the training centers (Some partners are able to order them but you will definitely find them at the training centers)

Search for training centers and let them know you are looking for the Dynamics NAV training materials (There is currently only 2009 materials available - 2013 is still work in progress at Microsoft)
We use the World edition and have the following manuals available, yours may be slightly different due to US localisation but this should give you an idea of what you are looking for:

INVENTORY
TRADE
MULTI SITE OPERATIONS
WAREHOUSE MANAGEMENT
