Thank you for your question. I agree with Mike Mcelhaney that setting up security on all other cashiers but yourself would help eliminate this problem.
Does it seem to be all the transactions are deleted or just certian ones? How do you know that transactions are being deleted?
Other than accessing SQL through Management Studio or Store Operations Administrator there is not a way to delete transactions without a trail.
The only way to retrieve data would be if you had a backup that had the data in it and then merging that data onto the current database. (please be aware that database merging is considered a PTS reqeust and not a standard service reqeust if you look to have Microsoft help)

They may be getting into the database somehow (SQL or Store Ops Administrator).
I would start by locking down security to the cashiers in Store Ops Manager -> Database Menu -> cashiers. And take away any permissions the cashier's don't need. You (as the administrator) should be using a different login than the cashiers.
