When I am in the Customer Service Hub experiencing the "test environment" for UI, I cannot add a new opportunity without it being a lead first. It appears from the YouTube videos that I've watched that there should be a "sales" option on the site map bar, however I cannot figure out how to add that.

The Customer Service Hub is for Customer Service not Sales so you won't find Opportunities on the site map. You can either add to the CS Hub if you wish as suggested by Henry or you can install the Sales App.

Are you able to edit the Customer Service Hub app to add the Opportunity entity in your site map?
