Hoping someone can help me or at least answer question...is it possible in a standard dashboard to merely display "numbers"? i.e. Number of open tasks in one box, number of overdue invoices in another box? I cannot find anything on this, only Power BI related. Thanks!

You cannot only show numbers, metrics are shown with charts:
This means, you need to use the charts in your Dashboards to show metrics.
